This specialty microlot has undergone a meticulous anaerobic fermentation process. 72 hours in cherry followed by 36 hours in a sealed tank - before being patio-dried for 16 days with regular raking to ensure even drying. Grown under Inga shade trees, the coffee thrives in ideal conditions with temperatures ranging from 19–24°C and humidity levels between 70–80%, contributing to its vibrant complexity and refined flavour profile.
